Next time I think I will be taking it off at 145 and putting it in the oven at 350 till it reaches 165 so we can get crispy skin.

Many of us use a vacuum sealer to get the air out of the bag but you don't have to but it does seem to extend how long it stays good.

Personally I think the best electric smoker is a used MES 40" (MES40) you get off Craigslist.org or Facebook for like $40-$50, wash out at the car wash and do a simple rewire to it.
