I've been working on this all day, have done gobs of searching and many trials and now I'm reaching out for help. nothing I've seen posted works for me, and I think the reason is there's no valheim.x86_64 file in the valheim directory anymore, it's just valheim.exe and the start_game_bepinex.sh is looking for that valheim.x86_64.
