Uhm Eleonora's Poleblade it's fantastic with an amazing (unique) ash of war, but if you want versatility then the Godskin Peeler. eleonora’s poleblade sucks. uchigatana and nagikaba are better bleed builds (with blood affinity and sepukku). godskin peeler is very situational, for example i only ever use it for the second phase of fire giant.It really depends - you could use occult affinity and use the ash of war called seppuku (which adds a large amount of bleed buildup to the weapon) occasionally, or you could just set the weapon to blood affinity and save yourself the hassle of buffing it all the time (but have a lower AR). It's a personal choice based on your playstyle.

Black Flame Tornado absolutely melts Elden Beast. That ash of war is on godskin peeler, so feel free to use that. Radagon is weak to fire damage and Elden Beast is weak to physical damage. Both have an insanely high Holy resistance and are immune to status effects. They are weakest to physical damage.
