Here too, the thinner steels will heat faster. I think the majority opinion of folks with steels would say 1/4" is fine for a single pizza, 3/8" is better for multiple pies while being reasonably manageable, and 1/2" is overkill, and as @SonVolt says, would be a PITA to move.
